New Danish concept-restaurant serves discarded food

A new Danish restaurant of the name Spisehuset Rub & Stub is opening their doors to food lovers in Copenhagen, presenting a menu consisting solely of discarded food.

On July 4, the first tunes of the annual Copenhagen Jazz Festival was played in the capital of Denmark – a festival that will run until July 14 and attract 250,000 guests. This summer, the many guests of the celebrated jazz festival will get the chance to experience the sneak premiere of a new and original concept.

Spisehuset Rub & Stub (Eatery Lock, Stock and Barrels red.), which is created by Tore Heerup, base their menu solely on discarded produces donated to them by the Danish National Food Bank, which collects large quantities of discarded foods from Danish supermarkets every day.

This project presents an original culinary experience to its guests by introducing an ever-changing menu depending on the daily donations from the Food Bank. Furthermore Spisehuset Rub & Stub calls attention to what we consume and how we can reduce the waste of perfectly good food by being inventive – a green and innovative approach to consumption that resonates in Copenhagen’s already flourishing waste-to-energy initiatives.  

All products collected by the National Food Bank and served in Spisehuset Rub & Stub are as fresh as the products you would normally buy in the supermarket, but have been discarded due to aesthetic reasons – be it a bent cucumber or a loose banana.

According to Tore Heerup the challenge for Spisehuset Rub & Stub is thus not to find fresh products, but rather for the Head Chef and his team of volunteers to figure out how to incorporate them in a menu:

It is our Chef, who faces the biggest challenge, which is to create courses out of the varying products we receive. You have to be creative.

So far the menu has consisted of Chili con Carne and Rhubarb Trifle, but when the restaurant has its official grand opening on September 13 2013 it is likely to be something completely different.
